Serves 21 cup fresh breadcrumbs
1/4 cup finely grated parmesan
30g melted butter
1T finely chopped thyme leaves
2 x 200g chicken breasts
lemon wedges (to serve)
Combine the breadcrumbs, parmesan, butter, thyme and pepper in a bowl.
Place the chicken into a baking dish lined with wax paper.
Top the chicken with the breadcrumb mixture.
Bake for 10 minutes or until the chicken is cooked through and the crumbs are golden brown.
Serve with lemon wedges and the green salad below.
